Golden Honey Fudge

ingredients      oil for spraying
      1 ½ cups sugar
      1 cup of brown sugar
      1 cup of cream
      2 Tbsp West Coast Honey
      50g Butter
      1 tsp vanilla extract
      ½ cup chopped nuts (optional)
Method      Line a 20cm square cake tin with foil and spray with oil. Spray the sides of a medium to heavy saucepan with oil. Add both sugars, cream and honey to the saucepan and bring mixture to the boil, stirring, over   medium-high heat. At the soft ball stage (120°C on a sugar thermomenter), remove from the heat and add the butter and vanilla. Cool without stirring, until the mixture reaches 70°C, then beat until it starts to thicken. (The electric handheld beater is great for this job.) Add the nuts and beat until the fudge starts to lose its glass and becomes very thick. Quickly pour into the prepared tin. Score into squares while still warm. When cold, store in an airtight container.
